As one of the first Turkic groups to embrace agriculture, the Uyghur community considers wheat products a staple, gradually incorporating rice into their diet. The bold and spicy flavors characteristic of Uyghur food are enhanced by a variety of spices traded along the Silk Road, such as cumin, chili, and Sichuan peppercorns. The cuisine is particularly celebrated for its two main flavor profiles: "spicy and sour" and "fragrantly spicy."
